Time Flies

When you are having fun!

 
So much going on my week break turned into a month and a half. All sorts of good things to catch you guys up on, and those posts will come.

 

 
Arkansas Thunder Drum Corp is up and marching along. All the school wrap up is over and summer break is upon us!! Caroline's Birthday was celebrated in style with the Kicking Daisies and Allstar Weekend concert. Can't believe she is 10!
The BIGGEST news, Skyler was home from the Air Force for 14 days!! We loved having him here with us, and tried to pack in as much famaily time as possible. We celebrated Skyler's Birthday the night before he left for his new base, He is 19 now. WOW!  We all miss him like crazy!

 I have still been doing my menus, just not getting them posted. MY BAD!! 

 
Menu for June 26- July 2
  • Grilled Chicken, zucchini and squash, with wild rice
  • Mexican lasagna, Tomato and Avocado Salad with cilantro lime dressing
  • Meatloaf, mashed potatoes, steamed green beans
  • Shrimp Fried Rice, salad with ginger dressing
  • Grilled Chicken Sausage Dogs, baked beans, and cole slaw
  • Grilled Tenderloin salad with blue cheese and balsamic vinaigrette
I want to share the recipe for this super easy Tomato and Avocado Salad. All the flavors of Guacamole but you eat it with a fork. Our Farmers Market had AMAZING tomatoes this week. I love summer!

 
Tomato & Avacado Salad
  • 3 nice fresh garden Tomatoes; cut into bite size pieces
  • 2 good Avocado; cut into bite size pieces
  • 1/2 cup chopped Red Onion
Put into a glass bowl and chill while you make the dressing

 
Lime Cilantro Dressing
  • 1 serrano pepper, seeded and coarsely chopped
  • 1 clove garlic
  • 1/4 cup lime juice
  • 1/3 cup honey
  • 2 teaspoons cider vinegar
  • 1/2 teaspoon salt
  • 1/4 cup packed cilantro leaves
  • 1/2 cup extra-virgin olive oil
Put the pepper and garlic into a food processor and chop until finely ground. Add lime juice, honey, vinegar, salt, and cilanto; pulse a few times to blend. Turn on and slowly add olive oil to incorperate. Add to bowl and toss gently.
