Meatless Monday

A while back my husband and I decided that we were giong to have a vegetarian night each week. I have searched and searched for filling, family friendly, meatless meals and now we are doing it on Mondays to make it easy to remember.

This weeks Meatless Monday was so tasty that I wanted to share it.

Pasta & Vegetable Toss
  • 3 cups of fresh chopped vegetables (I used a zucchini, half an onion, 1 yellow bell pepper, broccoli, and cauliflower, the great thing is you can use what every your family likes)
  • 2 TBSP Olive oil
  • 1/4 tsp or less crushed red pepper flakes
  • 1 tsp Italian Seasoning
  • 1 tsp salt
  • 1/2 tsp pepper
  • 7 oz whole wheat pasta; cooked
  • 1 TBSP Lemon juice, you can add the zest if you like a little more lemon flavor
  • 1/2 c parmesan cheese
Saute the vegetables in 1 TBSP of olive oil. Sprinkle in all seasonings & toss until tender. Add the noodles and remaining 1 TBSP of oil. Toss until noodles are coated with seasonings. Add lemon juice, zest, and cheese toss and serve.

  2. Yum! That sounds really good. I'm cutting back the amount of meat we eat in our meals, but I haven't been able to commit to meatless yet... mostly because around 9pm I get ravenous for protein when I do vegetarian for dinner. I can't tell if it's all in my head, or if my body is actually craving protein, weird.

  3. looks yummy! we don't eat meat on fridays..sometimes it is hard to come up with ideas...your pasta looks great and healthy too. thank you for sharing with tuesday night supper club.
