I love the combination of Chicken and Balsamic Vinegar and I have played around with it a lot. This is where I ended up.
Amazing Balsamic Chicken
(Serves 6)
- Olive oil
- 6 chicken thighs ( you could use breasts if you prefer)
- tarragon, salt, pepper
- 1 onion, sliced in rings
- 2 gloves garlic
- 1 can of tomatoes (petite diced, crushed, whatever texture you prefer)
- 2 -4 TBSP Balsamic Vinegar(depends on your taste)
- Chicken broth
- Cooked Basmati rice
Put the olive oil in a large skillet and get it HOT!! Season the chicken with salt, pepper, and tarragon and lay in skin side down. Cook 5 minutes and turn over. Cook another 5 minutes.
Remove from pan to a plate and add extra olive oil to skillet. Saute onions until tender and add garlic. Add tomatoes, vinegar and broth. Add 1/2 tsp of salt and pepper and 1 tsp of tarragon. Bring to a boil and put chicken back in pan. Cover with a lid, reduce to simmer and let cook until chicken is done.
To serve scoop the rice into the middle of a large round plate. place chicken around the edge and pour sauce over the entire dish. Sinmple, elegant and full of flavor.









Oooh, I think I know what I'm making for dinner! I think I have all the ingredients at home and I am a huge fan of balsamic.
